Tacos in the crockpot?

I'm hosting a fiesta for 30 and I'd like to have a taco bar. Should I do a pork shoulder, beef roast, or just ground beef kept warm in the crock pot. Any other ideas would be appreciated--I'll note that its on my birthday, so as little work as possible on my part would rock. Thanks all!
